Muffin Tin Monday

We are back in the swing of Muffin Tin Meals once again!

This week's was a relative success, although, yet again, Island Boy shocked and amazed me with what he wanted to eat vs. did not want to eat.

Island Boy, initially very excited.
Island Boy was initially quite excited about his lunch. Especially the cupcake. But, much to my amazement, he quickly devoured most of the grapes, about half of the apples, and licked only the frosting off of the cupcake. He took maybe 4 bites of the sandwich. He did finish the juice box quickly, though. Not really sure what exactly was up with this, other than he hasn't been a big lunch-eater lately. But it's still good (to me) that he's excited about healthy food, and, in fact, picks the healthy stuff first!

  2. Yeah... I always question when I put a dessert item on my daughter's muffin tin. What if that's all she ate? So I start by telling her that it's for dessert, and she usually saves it for last, or just pokes and licks at it a bit before eating the 'real' food., before going back to it. At least with muffin tin portions, her dessert is MUCH smaller than her normal serving!

  5. I wish I could take credit for that cupcake! It actually was a leftover from my bunco night last week. One of my friends, who is an amazing baker, made them. They were every bit as scrumptious as they looked!

  7. Sometimes for me, the fruit sweetness like the grapes and juice is much more, I don't know, depth-full, then dessert sweetness. Maybe that's something? Who knows. Have you tried the sun butter? I saw it at the store but put it back.. what does it taste like?

  8. Sun Butter? Does your son have food allergies? My daughters have extreme food allergies and Sun Butter has saved us! We all love it! Cute tin!!!

  9. @ Stretching My Imagination - I LOVE sun butter! It has a vaguely peanut butter-y taste, but is a little...toastier.

    @ Jessica - He does. His main allergen is peas (weird, right?). These produce hives all over his face. He has a milder reaction to peanuts, chick peas, and lentils (but, weirdly, no other legumes. Beans are totally fine). We have held off on peas with Island Girl.

  10. I have never heard of sun butter. The cupcake looks great. Love the fruit. I usually take a pic of the tin w/ the dessert & remove it if they won't save it to the end, unless dessert is yogurt.
